When lockdown was first announced it is unlikely the first thing on your mind was what you are going to make for your lunches over the next couple of months. But with many food catering services, restaurants, delis and takeaways closing, and most people being out of their usual working routine, lunches in lockdown have become a massive talking point.
It is not surprising that a lot of people have run out of inspiration when it comes to their lunches, or have completely scrapped their healthy eating plans. Don’t despair, Managing Director of Roamers Caterers, Joey Lovejoy, a self-confessed foodie and recently turned (almost) vegetarian, has come to your assistance in providing inspiring, healthy recipe ideas for your lunch, or brunch if you so wish. No, not all heroes wear capes!

Although Joey is more well known for providing exceptional wedding catering services in Essex, we think you will agree he has demonstrated he can rustle up a delicious, tasty lunch. With a focus on healthy, nutritious food and straightforward methods, Joey’s weekly recipes have become a major hit with Roamers’ followers on social media and we felt it is only right to capture them.
Grilled courgette, black bean and mozzarella quesadilla dish
On the first week of Joey’s Lockdown Lunches, we were presented with a mouthwatering grilled courgette, black bean and mozzarella quesadilla dish. One of Joey’s favourite dishes, this cheesy little number containing 26g of protein, is often his lunch of choice. The lovely thing about this dish is that it is so versatile and you can add chicken if you want to add meat.
Ingredients (serves one)
1 medium courgette, sliced diagonally
1/2 onion, finely chopped
3 garlic cloves, finely chopped (seems a lot but I love garlic)
1/2 red chilli, sliced diagonally
2 tsp ground cumin
2 tsp smoked paprika
190g (approx. 1/2 tin) black beans
1 tbsp tomato purée
4 tsp olive oil
Handful (approx. 60g for you little hands) grated mozzarella
1 green chilli
2 x medium whole-wheat tortillas
Large handful coriander, roughly chopped
Salt and pepper to taste
Prep the ingredients as outlined above and get your equipment ready. This will make it much easier to bring it all together. As you get more experienced you can complete the above jobs whilst cooking.
Toss the courgette slices in the oil and season well. Ensure the griddle pan is hot and cook for a couple of mins each side until tender and grill-marked (this will make it look like you know what you’re doing). Place it on one side on a paper towel to absorb the excess oil.
Season the onion and fry on a medium heat until soft (approx. 5 minutes). Add the garlic, chilli, cumin and smoked paprika. Before you do anything else, give this a smell, it’s wonderful! Fry this for another minute then add the black beans and tomato puree and a little bit of water (let’s say approx. 4 tbsp but this is a judgement call). Let this heat through (basically, bring it up to bubbling and leave for a minute). Use your spatula to mash the beans.
Add the coriander to the bean puree and add this to half the tortillas. Top this with the courgettes and the mozzarella. Do not overfill them. Fold in half then add to the griddle pan, cooking on each side for 1-2 minutes (you want the cheese to have melted
and the tortilla to be slightly crisp. Be careful when turning as the ingredients may spill out (I hope you didn’t overfill them like I told you not to).
Once cooked, cut into wedges and arrange onto the plate as shown below (this will instantly make you look a better chef in front of your partner, family or friends) with a little bit of salad.
